Inside Flamant, Plano’s newest restaurant from a Michelin Recommended team

Flamant means flamingo in French, and the restaurant is washed in shades of pink.

Two Dallas chefs whose restaurant received Michelin nods have made a return to the suburbs with their new European-inspired bistro, Flamant. It opens in Plano on June 10.

Tanner Agar and Taylor Rause’s first Texas restaurant started in the ‘burbs with Rye in McKinney. It served an interesting mix of food until Rye caught fire in 2022. That restaurant remains closed, but the duo behind it vowed to open another restaurant outside Dallas proper — and Flamant at State Highway 121 and the Dallas North Tollway show they kept their word.

We called it one of the most exciting restaurants opening in North Texas in 2025 because of the interesting cocktails and the Collin County address.

Agar and Rause also own Rye on Dallas’ Greenville Avenue, which has a cocktail bar, Apothecary, next door. Rye received a Michelin Recommended award in 2024, and its cocktails were lauded as some of the most exceptional in the state.

An early peek at Flamant shows it’s worth the drive to Granite Park, a row of restaurants that overlook a human-made pond on the edge of Plano.

Said another way, you have to know it’s there.

Many of Agar’s regulars live in McKinney, Plano and Frisco and have already tested the food at Flamant.

The menu starts with Agar’s cocktail list, which includes nods to ingredients or drinks in Spain, Italy and . The Menorca Martini is named for the Spanish island and is made with two gins, one distilled with olives, to give it a dirty martini taste. It comes with an anchovy skewered on top: entertaining for those who love an extra salty bite and surprising for those who’ve never seen floppy fish as a garnish.

However you view it, Flamant’s owners want to delight you. Drinkers are welcome to stick with more familiar territory with a glass of frozé or an espresso martini.

Word nerds can dig into the delicious cocktail names here. I Love You, Madeira is one of three espresso martinis and is fun to say aloud.

Same with the Jamón Rye, not a ham sandwich or a play on words of the book by an American novelist but a smoked whiskey drink. It’s made with Ironroot in Denison’s special barrel of rye washed in jamón serrano, and you can feel the fat and salt in each sip from the ham. Did I lose you? No problem, how about this: Your server will light the cocktail on fire tableside. Smoke! Fire!

For years, I’ve appreciated how Agar and Rause are serious about food, yet they talk about it in a way that makes a casual diner feel included.

There’s a burger at Flamant. A roasted chicken dish, too.

And a spinach-artichoke dip. For those who care, the dip has kale in it, and the artichoke hearts are saved for the side, where they’re fried and served as the method for dipping. It’s garlicky and cheesy — a dish my kids would happily eat but good for the chef-influenced diner, too.

Customers will find caviar service, tinned fish, marinated octopus and muhammara dip alongside more expected items like a Caesar salad, grilled chicken sandwich and three pastas.

Look close for little flourishes throughout the menu. Ingredients are tucked in interesting places, unimportant for those who don’t care but fun for those who do.

The patio is a friendly spot for appetizers, cocktails and dinner. The interior of the restaurant has doors that roll up, making you feel like you might catch a coastal European breeze from the nearby Texas highways.

Inside is a two- mural by Dallas artist Jennifer Kindert, painted with shades of burgundy, mauve and chestnut. For those who study it, it’s a series of female faces inspired by Picasso. For those who won’t, it’s a pretty wall above comfy maroon booths.

Flamant means flamingo in French, and the rose-colored quartzite bar top and shades of pink throughout offer casual femininity.

“Someone once told me that a good book ending should be ‘unexpected but inevitable,’” Agar said. It’s a fitting analogy for the menu and ambiance they’ve created at the new Flamant.

Flamant is at 5880 State Highway 121 (at Granite Park), Plano. It opens June 10.
